Fish Facts

Widely prized for its sweet, mild taste and delicate texture, barramundi has been favorably compared to striped bass, red snapper, grouper, and other premium white fish.

 

Rockfish are lean and have a mild, sweet flavor with a nutty accent. The flesh has a medium-firm texture with medium flakes.

Chilean Sea Bass has a fabulous taste and an almost sinful mouthfeel. Its high fat content gives it a rich, moist, tender flavor profile which melts in your mouth. It has white flesh with large, tender flakes.

Due to its high fat content Sablefish has a velvety texture (hence the name "Butterfish") with a mild but distinctive flavor profile. The flesh is white with large, delicate flakes. Sablefish is a richly flavored fish with a high oil content and satiny texture. They are highly valued for their buttery texture and are frequently sold to Japan before the US market.

Ono fish gets its name from the Hawaiian word "ono" which means "good to eat". It is closely related to King Mackerel and is marketed both as Ono and Wahoo. Ono has mild-sweet tasting flesh with a firm texture, moderate fat, and large, circular flakes when cooked. Their flesh is a beautiful white color and remains white when cooked. Fillets have less blood-line than similar pelagic fish which means they have a higher yield from purchased fillets to useable portions. Shelf life for Wahoo is relatively short...up to 10 days if properly cared for.

Red Snapper is a lean, moist fish with a firm texture and a distinctive sweet, nutty flavor wich makes it versatile for many flavor components from mild to intense seasoning.

Tripletail meat is white, flakey and delectable. Tripletail, as the name implies, have a body that appears to have three tails. They have the general appearance of a large crappie in body shape, yet have the coloration of a rockbass. They swim/float on their side just like a flounder.
